1 can of black beans, drained and rinsed, 1/2 cup of cooked quinoa, 1/2 cup of breadcrumbs, 1/2 cup of grated carrots, 1/4 cup of diced red onion

1/4 cup of chopped fresh cilantro, 1 egg , 1 tablespoon of cumin, 1 tablespoon of chili powder, Salt and pepper to taste

Instruction

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a large mixing bowl, mash the black beans with a fork or potato masher until they are mostly smooth.

Add the quinoa, breadcrumbs, grated carrots, red onion, cilantro, beaten egg, cumin, chili powder, salt, and pepper to the mixing bowl. Mix well until all ingredients are evenly combined.

Form the mixture into patties (about 1/2 cup of mixture per patty) and place them on the prepared baking sheet.
