6 egg yolks, 1 cup granulated sugar, 1 1/2 cups mascarpone cheese, 1 1/2 cups heavy cream, 1 cup strong coffee or espresso, cooled
1/4 cup liqueur (such as Marsala or Amaretto) (optional), 24-30 ladyfingers, Cocoa powder or grated chocolate, for dusting
In a large bowl, whisk together the egg yolks and sugar until light and fluffy. Add the mascarpone cheese and continue to whisk until smooth.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
In a shallow dish, mix together the cooled coffee or espresso and liqueur (if using). Dip the ladyfingers into the coffee mixture and layer them in the bottom of a 9x13 inch baking dish.
Spread half of the mascarpone mixture over the ladyfingers. Repeat the layering process with the remaining ladyfingers and mascarpone mixture.
Cover and chill in the refrigerator for at least 4 hours, or overnight. Dust with cocoa powder or grated chocolate before serving.
This recipe makes 8-10 servings and can be easily halved or doubled depending on the size of your dish and number of servings you need.
You can also adjust the sweetness and the amount of liqueur to your liking. You can also use different type of cookies for layering,
such as savoiardi or pavesini, or even try different flavored syrups or liqueurs for a different twist.
