Ingredients 

2 lbs of peeled and diced potatoes, 1 diced onion, 3 cloves of minced garlic, 4 cups of chicken or vegetable broth, 2 cups of whole milk,

1/2 cup of heavy cream, Salt and pepper to taste Optional toppings: shredded cheese, crumbled bacon, chopped green onion

Instructions 

In a large pot, heat a little bit of oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

Add the diced potatoes and broth to the pot and bring to a boil.Reduce the heat and let the potatoes simmer until tender, about 15-20 minutes.

Use an immersion blender or transfer the mixture to a blender and puree until smooth.Return the pureed mixture to the pot and add the milk and heavy cream. Stir to combine.

Season with salt and pepper to taste. Serve hot, with your desired toppings, if desired.

Potato soup can be easily customized with the addition of ingredients such as carrots, celery, or even corn. You can also add herbs such as thyme or rosemary for extra flavor. Enjoy!
