3 cups all-purpose flour, 1 1/2 cups granulated sugar, 3 1/2 teaspoons baking powder, 1/2 teaspoon salt

1 cup (2 sticks) unsalted butter, 4 large eggs, 1 1/4 cups milk, 1 teaspoon vanilla extract, 1/2 cup rainbow sprinkle

3 cups powdered sugar, 1/2 cup (1 stick) unsalted butter, 1/4 cup heavy cream, 1 teaspoon vanilla extract, Gel food coloring in pink, purple, and blue

Instructions 

Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round cake pans.In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, cream together the butter and eggs until light and fluffy. Beat in the vanilla extract.

Add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined. Fold in the rainbow sprinkles.

Pour the batter into the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

In a large bowl, cream together the powdered sugar and butter until light and fluffy. Beat in the heavy cream and vanilla extract.

Divide the frosting into three equal parts. Color one part pink, one part purple, and one part blue.

To assemble the cake, place one cake layer on a serving plate. Frost the top with the pink frosting. Repeat with the remaining cake layers, stacking them on top of each other.

Frost the top and sides of the cake with the blue frosting. Decorate the cake with the edible unicorn horn and ears, edible flowers and sprinkles, and rainbow candy.
