Ingredients

1 lb of dried lentils(rinsed and drained),1 large diced onion, 2 minced garlic cloves, 2 diced carrots, 2 diced celery stalks, 4 cups of chicken or vegetable broth,

2 cups of water, 1 can of diced tomatoes, 1 tsp of dried thyme, 1 tsp of dried rosemary, Salt and pepper to taste

Instructions

Add the carrots and celery to the pot and cook for an additional 5 minutes. Stir in the lentils, broth, water, tomatoes, thyme, rosemary, salt, and pepper. Bring the soup to a boil.

Reduce the heat to low and let the soup simmer, covered, for 30-40 minutes, or until the lentils are tender. Use an immersion blender or transfer the soup to a blender and puree until smooth.
