Lentil soup is a popular and healthy dish in the United States. It is made with lentils, vegetables, and spices and is easy to prepare.
1 lb of dried lentils(rinsed and drained),1 large diced onion, 2 minced garlic cloves, 2 diced carrots, 2 diced celery stalks, 4 cups of chicken or vegetable broth,
2 cups of water, 1 can of diced tomatoes, 1 tsp of dried thyme, 1 tsp of dried rosemary, Salt and pepper to taste
In a large pot, heat some oil over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.
Add the carrots and celery to the pot and cook for an additional 5 minutes. Stir in the lentils, broth, water, tomatoes, thyme, rosemary, salt, and pepper. Bring the soup to a boil.
Reduce the heat to low and let the soup simmer, covered, for 30-40 minutes, or until the lentils are tender. Use an immersion blender or transfer the soup to a blender and puree until smooth.
Serve the lentil soup hot, garnished with additional salt and pepper, if desired. This lentil soup recipe is a great starting point, but feel free to add or subtract ingredients based on your personal tastes.
You can also try adding diced ham, bacon, or sausage for added flavor and protein. Enjoy!
Lentil Selection: Different types of lentils have different cooking times, so choose the right type for your recipe.
Brown or green lentils are firm and hold their shape well, while red lentils are softer and break down more easily, which can give the soup a creamier texture.
Aromatic Vegetables: To enhance the flavor of the soup, add extra aromatic vegetables like leeks, celery, or fennel to the pot with the onion and garlic.
Stock Selection: For a richer flavor, use a high-quality stock or broth. You can use chicken, beef, or vegetable stock depending on your preference.
