Jaffa cakes are a popular British treat consisting of a sponge base, a layer of orange jelly, and a chocolate coating. They are easy to make at home with just a few simple ingredients.

Ingredients 

2 cups all-purpose flour, 1 cup granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon salt, 1 cup (2 sticks) unsalted butter,

2 large eggs, 1 teaspoon vanilla extract, 1/2 cup milk, 1 package orange jelly, 1 cup boiling water, 1 cup semisweet chocolate chips, 1/4 cup vegetable oil

Instructions 

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12-cup muffin tin. To make the sponge, in a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, cream together the butter and eggs until light and fluffy. Beat in the vanilla extract.

Add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined.

Pour the batter into the prepared muffin tin. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely before frosting.

In a medium bowl, whisk together the jelly powder and boiling water until the powder is dissolved. Pour the jelly mixture over the cooled cakes and refrigerate for at least 2 hours.

In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave on high for 30 seconds, or until the chocolate is melted and smooth.
