Chicken burritos are a popular Mexican dish that consists of a flour tortilla filled with shredded chicken, beans, rice, cheese, and various toppings such as salsa, sour cream, and guacamole.

The chicken used in chicken burritos can be cooked in a variety of ways, such as grilled, sautéed, or even fried.

Preheat your oven to 375°F (190°C). In a large skillet, heat a bit of oil over medium heat. Add the onions, bell peppers, and garlic and sauté until they are tender.

Add the diced tomatoes, chili powder, cumin, salt, and pepper to the skillet and continue to cook for an additional 5 minutes.

Stir in the cooked white rice, black beans, and shredded chicken, and cook until heated through.

Lay the flour tortillas on a clean surface, and divide the chicken mixture among them. 

Sprinkle shredded cheese on top of the chicken mixture, and roll the tortillas tightly to enclose the filling.

Place the burritos seam-side down on a baking sheet, and bake for 15 minutes, or until the cheese is melted and the tortillas are golden brown.

Remove the burritos from the oven, and let them cool for a few minutes before serving.

Serve the burritos with your favorite toppings, such as sour cream, guacamole, lettuce, and cilantro.
