Ingredients 

2 tbsp of butter, 1 diced onion, 2 minced garlic cloves, 2 tbsp of flour, 4 cups of chicken or vegetable broth, 2 cups of heavy cream,

2 lbs of broccoli florets, 8 oz of grated sharp cheddar cheese, Salt and pepper to taste, Fresh parsley, chopped (optional, for garnish)

Instructions 

In a large pot, melt the butter over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.

Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes, stirring constantly. Gradually pour in the broth, whisking constantly to avoid lumps. Bring the mixture to a boil.

Reduce the heat to low and stir in the cream, broccoli, cheddar cheese, salt, and pepper. Let the soup simmer, uncovered, for 20-30 minutes, or until the broccoli is tender.

Use an immersion blender or a standard blender to puree the soup until smooth. If using a standard blender, make sure to blend the soup in batches and return it to the pot.
